(Spring is the best season, but I actually use Spanish mackerel caught in winter, which has a strong fatty flavor. I'm a fisherman myself, so that's something I can do.)

(This Kyushu salad is made with new onions from Kumamoto and Itoshima.)

◆Fried chicken with sweet and sour sauce

(The juicy fried chicken is cooked in a yurin-tori sauce before it becomes stubborn, so it's very tender.)

◆Our specialty, bite-sized Junjo gyoza dumplings, made with Itoshima's Ikisan pork

(Pork that is rich in minerals and raised at Ikisan Farm is grilled to perfection without using oil. It's juicy and the star of the day.)

◆Consommé fries

(We've arranged it with a consommé flavor so that everyone can easily eat it.)

◆Main course: Hakata salted motsunabe / Spicy motsunabe / Salt-based black pork gyoza hotpot [Please choose from these three types of hotpot.】

(It's now a cold winter staple.The soup stock is basically lightly seasoned so that the delicate flavor of the black cutlet beef small intestines can be fully enjoyed.
